gluten-free flour blend: 3 Cups

Xanthan
gum (If your flour blend already contains xanthan, don’t use it): 1 tsp

Sugar:
1/4 cup
·
Baking
soda: 1 tsp
·
Baking
powder: 1 Tbsp
·
Salt:
1/2 tsp
·
Cold, unsalted butter: 1/2 cup
·
Currants:
2/3 cup
·
Buttermilk:
1 Cup

For Loaf Brushing:

Melted
butter: 1 Tbsp

1 Tbsp
Directions:
1. Preheat your oven at 375-degrees F.
Line a medium sized cookie sheet with parchment paper.
2. Take a bowl and mix gluten-free flour
with sugar, baking powder, salt, baking soda and xanthan gum (if you are
using).
3. Add butter into the mixture and mix
well till tiny crumbs form.
4. Now add currants and mix well.
5. Take another bowl, and mix buttermilk
with an egg. Add this liquid mixture to the flour mixture. Stir gently with
spatula and then blend the mixture using your hands, until a wet dough is
formed.
6. Keep the dough little bit sticky;
however, make sure you can form it into a ball shape and place it on a
parchment paper lined cooking sheet.
